happy new year

Is it ever cold here in the midwest. We are down to one car with 3 employed in our family. I have the job of cooking, cleaning and making sure hubby and teenagers get to and from jobs. Will be glad when we can get at least 1 more car. The one we hoped would last through the winter didn’t and is in our ditch with bad transmission. We need to get through this really cold spell to get another car and take care of the one in the ditch. Thank goodness it’s warm and cozy in our house. God bless all those homeless shelters who care for those out on the streets.

It’s a time for prayer and seeking God the first of this new year. We need to be on our guard and be diligent to pray and commit all to Him.

Day 5 – Daniel Fast

Today I had apples and celery with peanut butter. It is 3:17 p.m. I will go off the Daniel Fast today and go back on as needed. I feel better and it seems my system has gotten a good cleanse. YAY! Not that I’m going to totally pig out – just have some yogurt with protein powder and not eat bread – that’s my plan – bread is what I do not need.

Day 4 – Daniel Fast

Apple-Oats Breakfast Cereal (a recipe to make later)

I went to walk dog at park and picked up some walnuts, then came home and picked 1 cherry tomato and one larger tomato and found 2 large zucchinis and picked some flowers. The zucchinis were large so I put a ruler there – not accurate measurement in the container.

Life is good and so are Tuesdays.

I’m full. I really eat quite a bit when I eat like this and don’t lose a bunch of weight; at least I didn’t the last time a couple months ago. This morning I weighed 148 pounds. A couple years ago I was stuck at 155 pounds, which was my top pregnant weight. I’m doing better than that but need to get about 10 pounds knocked off.

These recipes are from essential 3-ingredient cookbook

Orange-Strawberry Drink
2 c. orange juice, chilled
1 1/2 c. apricot nectar, chilled
1 c. frozen strawberries, thawed
COMBINE ALL INGREDIENTS IN BLENDER AND MIX WELL.

Guacamole Soup
1 (18 oz.) can tomato juice
1/2 c. chopped onion
2 avocados, peeled, seeded, divided
IN SAUCEPAN, HEAT TOMATO JUICE AND ONION 5 MINUTES
STIR IN 3/4 DICED AVOCADO AND HEAT. RESERVE THE REST FOR GARNISH
SPRINKLE AVOCADO ON TOP OF SOUP AND SERVE

Summer Spinach Salad
4 c. fresh spinach (or romaine lettuce), torn into pieces
1/2 c. fresh strawberries, sliced
1 c. halved, seedless grapes
IN SALAD BOWL, COMBINE ALL INGREDIENTS.
TOSS WELL BEFORE SERVING.

Spinach-Orange Salad

2 c. spinach, torn into pieces
1/3 c. almonds, slivered, toasted
1 (11 oz.) can mandarin oranges
IN SALAD BOWL, COMBINE ALL INGREDIENTS.
TOSS WELL BEFORE SERVING.

Spinach-Apple-Walnut Salad

6 c. fresh spinach leaves, torn into pieces
2 red delicious apples, cored, chopped
1/2 c. coarsely chopped walnuts
COMBINE IN SALAD BOWL AND TOSS WELL BEFORE SERVING.

Romaine-Artichoke Salad

1 head romaine lettuce, torn into pieces
1 (14 oz.) can artichoke hearts, drained and chopped
1 large tomato, cut in wedges
COMBINE IN SALAD BOWL; TOSS BEFORE SERVING.

Boston Bibb Lettuce Salad
1 head bibb lettuce, torn into pieces
1 (11 oz.) can mandarin oranges, drained
1/3 c. walnuts
COMBINE IN BOWL AND TOSS BEFORE SERVING.

Walnut-Cranberry Relish
1 (16 oz.) can whole berry cranberries
1 (8 oz.) can crushed pineapple, drained
1/2 c. chopped black walnuts
COMBINE IN BOWL, MIX AND CHILL

Bean and Corn Salsa
1/2 c. canned black beans, drained
1/2 c. canned whole kernel corn, drained
1 c. thick and chunky salsa
COMBINE IN BOWL, MIX – KEEP CHILLED

Mexican Corn
1 (16 oz.) pkg. frozen corn, thawed
1/2 c. thick and chunky salsa
1/4 c. sliced ripe olives
COOK CORN ACCORDING TO PACKAGE DIRECTIONS.
STIR IN SALSA AND OLIVES
COOK UNTIL HOT AND DRAIN.

Vegetable Christmas Tree

1 head broccoli
1 head cauliflower
24 cherry tomatoes
BUILD TREE ON LARGE TRAY OR PLATTER.
MAKE TREE TRUNK OUT OF BROCCOLI STEM.
BUILD 1ST ROW OF TREE WITH CAULIFLOWER FLORETS
NEXT ROW WITH TOMATOES AND ALTERNATING ROWS.
DECREASE SIZE OF EACH ROW.
OUTLINE TREE WITH BROCCOLI FLORETS.
SERVE WITH HUMMUS.

Rice Pilaf
2 c. cooked rice
1/3 c. raisins or chopped dates
1/4 c. almonds, slivered, toasted
IN BOWL COMBINE ALL INGREDIENTS AND MIX WELL.

Day 1 – Daniel Fast

So far so good – I am blessed – God has given me a great church, friends, family and home.

What I ate today – 3-bean salad with extra lettuce, shredded cabbage and tomato, applesauce, more of the same, popcorn, apple.

I really like this recipe because there is no sugar, which I am convinced is a drug to be avoided. I’ve been eating too much bread and butter along with peanut butter and whatever I want. It will take a few days to clear out my system so my digestive system isn’t so clogged. Who wants a clogged digestive system?? Not me.
