pasta with broccoli and tomato sauce

Happy birthday dear hubby!!!!!! YAY for 60 !

Yesterday I made the broccoli, tomato, spaghetti meal with a salad I put on the tail end of this post.

Here is the recipe in my version:

pasta with broccoli and tomato sauce

5 c. broccoli florets
1 T olive oil
2 cloves garlic, minced
4 large tomatoes (2 lbs) or 1 large can (28 oz) tomatoes (or half of each)
1/8 tsp. cayenne pepper
1 1/2 T chopped almonds
6 oz. spaghetti or linguine
2 T minced parsley

*Cook broccoli in boiling water 2-3 minutes. Rinse under cold water, drain and set aside.
*Heat olive oil for 30 seconds; add garlic and cook 3 minutes. Add tomatoes and cayenne pepper and simmer 15 minutes. Add almonds and simmer 5 more minutes.
*Cook spaghetti. Drain and put in serving bowl.
*Add cooked broccoli to warm tomato sauce and toss to heat through.
*pour over pasta and sprinkle with parsley.
Serves 4

I have lots of garlic chive growing outside so I added that to the meal and the salad. I forgot to put parsley on the finished dish.

A Hallelujah Acres video I recently saw said to eat your salad first and then the cooked food. We have been doing that – considering the raw the best and first thing to eat and then we don’t eat so much of the cooked. Although, both broccoli and tomato release more vitamins when they are cooked a little, so this is a very nutrient-dense meal.
