almond maple granola

3 cups rolled oats
1 cup almonds
1 cup walnuts
1 cup pecans
1/4 cup milled flax
2/3 cup unsalted sunflower seeds and pumpkin seeds
6 tablespoons pure maple syrup
1/4 cup olive oil
2 tablespoons warm water
2 cups dried cranberries, apricots and/or blueberries and maybe carobs

1. Preheat the oven to 250 degrees F (120 degrees C). Lightly grease a cookie sheet with sides, or a large cake pan with cooking spray.

2. In a large bowl, toss together the oats, almonds and nuts, flax, and seeds. In a separate bowl, whisk together the maple syrup, oil, and water. Pour the liquid over the oat and nut mixture, and stir until evenly coated. Spread out on the prepared cookie sheet.

3. Bake for 1 hour and 15 minutes in the preheated oven, stirring occasionally until evenly toasted. Mix in dried fruits. Cool, and store in an airtight container at room temperature.
