Orange-Strawberry Drink
2 c. orange juice, chilled
1 1/2 c. apricot nectar, chilled
1 c. frozen strawberries, thawed
COMBINE ALL INGREDIENTS IN BLENDER AND MIX WELL.

Guacamole Soup
1 (18 oz.) can tomato juice
1/2 c. chopped onion
2 avocados, peeled, seeded, divided
IN SAUCEPAN, HEAT TOMATO JUICE AND ONION 5 MINUTES
STIR IN 3/4 DICED AVOCADO AND HEAT. RESERVE THE REST FOR GARNISH
SPRINKLE AVOCADO ON TOP OF SOUP AND SERVE

Summer Spinach Salad
4 c. fresh spinach (or romaine lettuce), torn into pieces
1/2 c. fresh strawberries, sliced
1 c. halved, seedless grapes
IN SALAD BOWL, COMBINE ALL INGREDIENTS.
TOSS WELL BEFORE SERVING.

Spinach-Orange Salad

2 c. spinach, torn into pieces
1/3 c. almonds, slivered, toasted
1 (11 oz.) can mandarin oranges
IN SALAD BOWL, COMBINE ALL INGREDIENTS.
TOSS WELL BEFORE SERVING.

Spinach-Apple-Walnut Salad

6 c. fresh spinach leaves, torn into pieces
2 red delicious apples, cored, chopped
1/2 c. coarsely chopped walnuts
COMBINE IN SALAD BOWL AND TOSS WELL BEFORE SERVING.

Romaine-Artichoke Salad

1 head romaine lettuce, torn into pieces
1 (14 oz.) can artichoke hearts, drained and chopped
1 large tomato, cut in wedges
COMBINE IN SALAD BOWL; TOSS BEFORE SERVING.

Boston Bibb Lettuce Salad
1 head bibb lettuce, torn into pieces
1 (11 oz.) can mandarin oranges, drained
1/3 c. walnuts
COMBINE IN BOWL AND TOSS BEFORE SERVING.

Walnut-Cranberry Relish
1 (16 oz.) can whole berry cranberries
1 (8 oz.) can crushed pineapple, drained
1/2 c. chopped black walnuts
COMBINE IN BOWL, MIX AND CHILL

Bean and Corn Salsa
1/2 c. canned black beans, drained
1/2 c. canned whole kernel corn, drained
1 c. thick and chunky salsa
COMBINE IN BOWL, MIX – KEEP CHILLED

Mexican Corn
1 (16 oz.) pkg. frozen corn, thawed
1/2 c. thick and chunky salsa
1/4 c. sliced ripe olives
COOK CORN ACCORDING TO PACKAGE DIRECTIONS.
STIR IN SALSA AND OLIVES
COOK UNTIL HOT AND DRAIN.

Vegetable Christmas Tree

1 head broccoli
1 head cauliflower
24 cherry tomatoes
BUILD TREE ON LARGE TRAY OR PLATTER.
MAKE TREE TRUNK OUT OF BROCCOLI STEM.
BUILD 1ST ROW OF TREE WITH CAULIFLOWER FLORETS
NEXT ROW WITH TOMATOES AND ALTERNATING ROWS.
DECREASE SIZE OF EACH ROW.
OUTLINE TREE WITH BROCCOLI FLORETS.
SERVE WITH HUMMUS.

Rice Pilaf
2 c. cooked rice
1/3 c. raisins or chopped dates
1/4 c. almonds, slivered, toasted
IN BOWL COMBINE ALL INGREDIENTS AND MIX WELL.
