tuna or chicken roll-ups



1/2 onion, finely chopped
2 tbsp. butter
1 (8 oz.) can water chestnuts, diced
1/2 c. sour cream or plain yogurt (I use yogurt)
1/4 c. bread crumbs
1 egg
1/2 c. Swiss cheese or Mozzarella, grated
1/4 tsp. black pepper
2 c. diced chicken or tuna (I use tuna)
2 pkg. crescent rolls

Saute onion and butter; add diced water chestnuts and cook for about 3 minutes. Remove from heat and add sour cream or yogurt, bread crumbs, beaten egg, cheese, pepper and tuna or chicken. Roll up in crescent roll, starting at wide end. Bake at 350 degrees for 15 minutes.

Preparation: 15 minutes.

Cooking: 15 minutes.

Very easy recipe. Yields 16 sandwiches.

Hamburger Goulash



1 lg. onion, chopped
1 lb. ground beef
1 c. macaroni
1 can red kidney beans
1 tbsp. oil
1/2 c. Cheddar cheese
1 can tomatoes
Salt and pepper

Brown onion and beef in oil; drain off excess fat. Add cooked macaroni to the meat mixture; then add tomatoes, beans, salt, and pepper. Add cheese and mix well. Cover and simmer for 20 minutes. You can add leftover green beans or corn.

Hamburger-Noodle Casserole

Hamburger-Noodle Casserole

1 pound ground turkey, cooked
1 onion, chopped
1 stalk celery, chopped
White sauce
1 cup plain yogurt
1 can whole kernel corn
4 cups cooked noodles

Cook hamburger and onion together, and then mix in white sauce, yogurt, and corn and simmer.

When noodles are done, mix all ingredients together and put in the oven at 325 F for 30 minutes. First sprinkle grated cheese over the top.

You can also mix everything together with the noodles dry if you are leaving it in the fridge overnight before cooking.

Serves 4-6
